PEACH COBBLER





INGREDIENTS:  (Serves 12)

   6 cups stewed peach slices (with juice)
   1� cups self-raising flour
   1 level tsp. baking powder
   Pinch of salt
   3/4 cup melted butter
   1 cup caster sugar
   2 large eggs, lightly beaten with fork
   1� cups milk


METHOD:


Pre-heat oven to 200C (400F).

Pour melted butter into a 25 X 38cm (10 X 15in) rectangular oven-proof dish and tilt dish to spread butter over the bottom.

Sift together s.r. flour, baking powder and salt into a medium mixing bowl.

Stir in sugar, eggs and milk and mix with wooden spoon until just combined.

Pour batter over the melted butter in the oven-proof dish.

Gently ladle stewed peaches over the top of batter.

Bake in pre-heated oven for 30 - 40 minutes or until the batter (which will rise over the peaches during baking) is golden brown.

Serve on its own while still warm or allow to cool to room temperature and serve with whipped cream or vanilla ice-cream.
