BREAD AND BUTTER BAKED CUSTARD




INGREDIENTS: (Serves 4 - 6)

   3 large eggs
   3 slices bread (day old okay)
   Butter or margarine
   1 1/2 cups milk
   2 tbsps sugar
   1/2 cup dried mixed fruit
   1/2 tsp vanilla essence
   Grated nutmeg (or ground cinnamon)


METHOD:

Pre-heat oven to 160C/320F.

Grease a round oven-proof pie dish with butter or margarine and scatter dried fruit evenly on the bottom.

Spread butter evenly over the bread, trim off the crusts and cut each slice into 4 triangles.

Arrange the bread triangles (buttered side up) over the dried fruit in pie dish.

With a hand whisk, beat eggs and sugar lightly.
Warm milk in a saucepan and stir into the egg and sugar mixture, add vanilla essence.

Gently pour over the bread in the pie dish and allow bread to soak in the custard mixture.

Sprinkle with grated nutmeg or cinnamon and bake for about 40 minutes until custard is set and the bread golden brown.

Serve warm (or cold) with cream or ice-cream.
